Let’s face it – it’s that time of year when we are all rushing around and barely have time to make a home cooked meal. This becomes especially difficult for those of us with dairy allergies or who are lactose intolerant (or have kids who are) because there are not a lot of quick and easy meals you can make! I figured now was as good a time as ever to post this recipe for Dairy & Lactose Free Quesadillas. Hopefully it will give some of you out there a little relief from your busy schedule!

The Ingredients

1/2 Green Pepper
1/2 Onion
3 Chicken Breasts
Garlic Salt
2 Cups Daiya Cheese (I used the mozzarella) or Your Favorite Dairy Free Cheese
8 Dairy Free Tortillas

The How-To-Do

  1. Dice green pepper and onion. Put a little olive oil in a skillet and cook veggies on medium heat for about two minutes.
  2. While that is cooking, cut chicken breasts into small cubes. Sprinkle with garlic salt. Add to the skillet with the veggies and cook until done.
  3. Place a little bit of the veggie and chicken mixture evenly onto a tortilla. Cover with cheese and then top with another tortilla.
  4. Spray a griddle pan with cooking spray and cook your quesadilla for about 2 minutes on each side or until brown and the cheese is melted.

What I like about this recipe the most is that it’s easily customized to make both dairy/lactose free and not dairy/lactose free for people like my husband who don’t want to eat soy cheese :). Makes life a lot easier! Especially when I am in a hurry to do Christmas shopping!
