Let’s face it – it’s that time of year when we are all rushing around and barely have time to make a home cooked meal. This becomes especially difficult for those of us with dairy allergies or who are lactose intolerant (or have kids who are) because there are not a lot of quick and easy meals you can make! I figured now was as good a time as ever to post this recipe for Dairy & Lactose Free Quesadillas. Hopefully it will give some of you out there a little relief from your busy schedule!
1/2 Green Pepper
3 Chicken Breasts
2 Cups Daiya Cheese (I used the mozzarella) or Your Favorite Dairy Free Cheese
8 Dairy Free Tortillas
- Dice green pepper and onion. Put a little olive oil in a skillet and cook veggies on medium heat for about two minutes.
- While that is cooking, cut chicken breasts into small cubes. Sprinkle with garlic salt. Add to the skillet with the veggies and cook until done.
- Place a little bit of the veggie and chicken mixture evenly onto a tortilla. Cover with cheese and then top with another tortilla.
- Spray a griddle pan with cooking spray and cook your quesadilla for about 2 minutes on each side or until brown and the cheese is melted.
What I like about this recipe the most is that it’s easily customized to make both dairy/lactose free and not dairy/lactose free for people like my husband who don’t want to eat soy cheese :). Makes life a lot easier! Especially when I am in a hurry to do Christmas shopping!
