I love me some pizza. Sometimes though, I am not in the mood to make a whole crust and everything. So on days I am feeling especially lazy but I have a craving for pizza, I make myself a mini pizza.
How do you make a mini pizza, you ask? Just follow the quick and easy recipe below!
- 1 Slice Pita Bread (you can use regular, wheat, etc. I used wheat in the example)
- 1 Spoonful Dairy Free Pizza Sauce – or enough to coat your pita (The Dei Fratelli brand is dairy free, there are different ones out there that are as well)
- 1 Handful Daiya Mozzarella Style Cheese (or whichever type of dairy free cheese you like)
- Toppings Of Your Choice – (I used turkey pepperoni, but most of the time I like to add some green pepper and onion!)
Coat your pita with dairy free sauce and then put your toppings and cheese on top. Put in oven under the broiler for about 5-10 mins until your cheese is melted and the pita bread is slightly crisp. That’s it!
And now…I think I will go and make myself one of these for lunch. MMmmm…Pizzaaaa…
